Herb Stuffed Chicken


2 medium sized chicken breasts

4 laughing cow triangles – 1 sin each or HEa (extra light)

1 teaspoon mixed herbs

2 rashers of bacon – no fat.


Preheat the oven to 180 degrees Celsius

Cut the chicken breast in half length way

Open out the chicken breast in a butterfly shape

Mix the mixed herbs and laughing cow together and stuff the chicken.

Fold back the chicken into its original shape and wrap the bacon around each breast.

Place the breasts on an oven dish and cook in the oven for 25 minutes until the chicken is thoroughly cooked.
