Swiss Canadian Bacon and Eggs

MAKES 4 SERVINGS

INGREDIENTS:

  • 8 eggs
  • 1/4 Cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 Cup finely chopped green onions, divided
  • Nonstick cooking spray
  • 4 slices Canadian bacon, cut in half
  • 1 cup (4 ounces) shredded Swiss cheese

DIRECTIONS:

  1. Preheat broiler.
  2. Whisk together eggs, milk, salt and pepper in medium bowl until well blended. Stir in all but 2 tablespoons onions.
  3. Spray 12-inch ovenproof skillet with cooking spray; heat over medium-Iow heat until hot. Add egg mixture. Cover and cook 14 minutes or until almost set.
  4. Arrange bacon in pinwheel on top of egg mixture. Sprinkle with cheese; broil 2 minutes or until cheese is bubbly. Top with remaining 2 tablespoons onion. Cut into 4 wedges. Serve immediately.
