Keto Tex-Mex Chicken

Spicy chicken with red and green bell peppers for that southern taste!

Serves 4

INGREDIENTS:

  • 4 tbsp. olive oil
  • 12 ounces chicken breast, cut into strips
  • 4 tbsp. powdered paprika
  • 2 tbsp. turmeric
  • Salt and pepper
  • Garlic powder to taste
  • 1 large onion, thinly sliced
  • 1 cup green bell pepper, cut into strips
  • 1 cup red bell pepper, cut into strips
  • 1 cup tomato salsa
  • 8 ounces cheddar cheese, grated

DIRECTIONS:

  1. Pre-heat the oven to 425°F.
  2. Prepare a casserole by oiling it lightly.
  3. Fry the chicken strips in the oil in a skillet until brown on all sides.
  4. Add the spices and seasoning.
  5. When the chicken is nearly done remove from the skillet and set aside.
  6. Add the onions and peppers to the skillet and cook for a few minutes until tender but still with a bite.
  7. Put the chicken into the casserole and top with the pepper mixture.
  8. Spoon the salsa on top and sprinkle over the grated cheese.
  9. Place in the oven for about 10 minutes to heat through and for the cheese to melt.
  10. Serve hot.
